Chili Glazed Pork Tenderloin

Chili Glazed Pork Tenderloin

Ingredients

For the Pork

  • 2 pork tenderloins (2 ¼ – 2 ½ lbs total) trimmed
  • 1 pkg Plentiful Pantry Chili Fixens (divided)
  • 2 Tbsp olive oil

For the Sauce

  • 1 C pineapple juice
  • 1/3 C brown sugar
  • 1 tsp apple cider vinegar
  • 1 1/2 tsp minced garlic
  • 1 Tbsp Chili Fixens mix

Instructions

  • Preheat oven to 350 degrees
    Heat a large ovenproof skillet on medium-high heat on the stovetop
    Rub tenderloins with a small amount olive oil and add remaining to pan
    Rub each tenderloin with 2-3 Tbsp Chili Fixens on all sides
    Brown the pork tenderloin for 2-3 minutes on each side in the skillet
    INhile browning, mix together all sauce ingredients except the Chili Fixens and
    Pour over the pork and put in preheated oven
    Bake for 20 minutes
    Remove from oven.
    Remove meat from pan and let rest for 5 minutes
    While meat is resting. return pan to the stovetop.
    Stir in 1 Tbsp Chili Fixens.
    Bring sauce to a simmer over medium heat.
    Simmer until slightly reduced and thickened.
    Slice pork and top with sauce.
