Garlic Herb Sauce
You will need:
12oz. of any pasta of your choice, our Red Bell Pepper Fettuccine is a sensational choice for this sauce.
2 tbl. Butter
2 medium tomatoes, diced or 16 oz. can, diced tomatoes, drained
8 oz. fresh mushrooms, sliced or 4 oz. can sliced, drained
2 1/4 oz. can sliced black olives, drained
Directions:
Cook pasta according to package directions. Melt butter in large skillet over med/high heat. Stir in sauce package, cooking for 1 minute. Stir in 2 cups water* and add mushrooms. Simmer for 8 minutes. Add olives and tomatoes and simmer for 2 minutes. Pour over pasta and toss. Serves four to six.
*For more pronounced flavor, use 1 cup white wine and one cup water.
Variation: Cut 1 lb. boneless, skinless chicken breasts into 1” pieces. Brown in skillet with butter for 3 minutes. Add sauce packet and water and proceed as above.
Shrimp & Grits
Serves 6.
1 packet Plentiful Pantry Garlic Herb Sauce Mix
3 cups water
1 cup milk
½ teaspoon salt
1 cup uncooked quick-cooking grits
6 tablespoons butter, divided
2 cups shredded sharp cheddar cheese
1 pound shrimp, peeled and deveined
1 teaspoon paprika
¼ teaspoon cayenne pepper, or more to taste
6 slices bacon, chopped
2 cups water
1/2 cup thinly sliced scallions
Bring water, milk and salt to a boil over medium high heat. Stir in grits. Cook, stirring occasionally, 5 to 7 minutes or until thickened. Remove from heat and stir in 3 tablespoons butter and cheese. Set aside and keep warm.
Rinse shrimp, remove tails and pat dry. Fry the bacon in a large skillet until browned. Remove bacon from pan and drain well. Remove most of grease and add remaining 3 tablespoons butter. Melt butter and add shrimp. Cook until shrimp turn pink, approximately 3 minutes. Remove shrimp to plate and keep warm. Add Garlic Herb sauce packet to pan along with red pepper and paprika. Stir in water and simmer until thickened. Add chopped bacon, scallions and cooked shrimp and sauté until shrimp are warmed thru.
Spoon grits into a serving bowl. Top with shrimp and sauce. Serve immediately.
