4 C. Water

1 lb. Chicken Breast (boneless/skinless), diced

1-2 Red or Green Bell Peppers, sliced

2 Tbsp. Olive Oil

Spoon rice onto plate and top with curry mixture. Enjoy!

If you prefer your curry “ramped up” with more vegetables, you can add some 1″ potato pieces, sliced carrots and fresh sliced mushrooms.

I love Thai Coconut soup in restaurants now I can have it at home this was delicious! I used fresh chicken and added potatoes, carrots and onions. It is a perfect mix and super easy to make. One of the best soup mixes around. Plentiful Pantry sure knows how to make foods delicious. This is a family favorite!

We bought several of your soups at your booth at the Del Mar Harvest Festival in October. Little did we know what surprise lied ahead for us. We made our first box of your Thai Coconut Soup tonight at home, for an easy mid-week dinner. WoW–the tasty flavor and quality of the soup base, adding a can of white meat chicken, made for a splendid meal for two adults, with left overs to spare! We can’t wait to try your other soups, and experience another new adventure!

This one is the best but the Farm Store at Cal Poly Pomona stopped carrying it.
