Thai Coconut Shrimp


  • 1 Box Plentiful Pantry Thai Coconut Soup mix
  • 6 cups water
  • 1 lb. raw shrimp peeled and deveined
  • 1 ½ cups instant rice
  • chopped fresh cilantro optional
  • lime wedges optional


  • In a large pot whisk 6 cups water with all 3 packets in the Thai Coconut soup mix. Bring to boil, then reduce heat to simmer and cook 20 minutes.
  • Add the shrimp and instant rice. Cook 5-7 minutes until rice and shrimp are cooked through.
  • Move to bowls and garnish with cilantro and lime.
