Organic Einkorn Pasta, Grown in Idaho and Made in Salt Lake City
Our organic einkorn pasta starts with einkorn, one of the first wheats people ever farmed. Grand Teton Ancient Grains grows the einkorn and stone-mills it into einkorn semolina on the Koyle family farm in Teton, Idaho. We press it through bronze dies and slow-dry it in our Salt Lake City facility, where we've made pasta since 1992. It is 100% organic einkorn pasta, made by a certified organic handler in Salt Lake City. Every bag holds American-grown einkorn, made in the USA.

From an Idaho farm to our Salt Lake City pasta line
Grown and stone-milled by Grand Teton Ancient Grains
Every bag of our einkorn pasta starts with einkorn semolina flour from our sister company, Grand Teton Ancient Grains. Same Koyle family, two companies: they grow and mill the einkorn in Idaho, and we turn it into pasta in Salt Lake City. Grand Teton supplies only our einkorn semolina flour; our other pasta lines use durum semolina from a separate supplier.

Bronze-cut and slow-dried in Salt Lake City, Utah
We have been making pasta in Salt Lake City since 1992. The einkorn dough is pressed through bronze dies, which leaves a rough, matte surface that holds sauce. Long cuts hang on rods and short cuts rest on screens while they dry slowly in a full dry room. We are GMP certified, a certified organic handler, and Scroll K kosher, so our einkorn pasta is 100% organic and Scroll K kosher certified.

What is einkorn pasta?
Einkorn pasta is pasta made from einkorn (Triticum monococcum), an ancient wheat. Einkorn is a diploid wheat with 14 chromosomes; modern bread wheat has 42 (Penn State Extension). It was one of the first grains ever cultivated, and its flavor is slightly nutty and a little sweet. Ours is made only from einkorn: no blends and no flavorings, just plain einkorn pasta in classic shapes.
Does einkorn pasta have gluten?
Yes. Einkorn is a wheat and contains gluten, so einkorn pasta is not gluten-free and is not safe for people with celiac disease (Foods, 2020; Nutrients review, PMC9322029). Its gluten behaves differently from modern wheat's, and some people say it feels easier on them. That is personal experience, not a medical claim. If you have a gluten-related condition, talk to your doctor first.
Einkorn vs. modern wheat
Einkorn is a different species from modern bread and durum wheat. It has a simpler genome, and studies report that it is naturally rich in carotenoids such as lutein and has a high protein content compared with common wheat (Hidalgo & Brandolini, J Sci Food Agric, 2014). A 2025 study of whole-grain einkorn pasta found that it kept more phenolic compounds, tocopherols and phytosterols than the other pastas tested (Foods, 2025). These findings come from research on einkorn in general, not from tests of our pasta.
How to cook einkorn pasta
Bring a large pot of well-salted water to a full boil. Add the pasta and stir gently in the first minute. Einkorn pasta is more delicate than durum pasta, so cook it by the time on the bag and start tasting a minute early. Save a cup of pasta water to loosen your sauce. Find ideas in our pasta recipes.
